Pork Picante
1 3/4 pound bone-in pork Boston butt roast
2 tablespoons olive oil
2 large onions, coarsely chopped
1 bulb garlic, separated into cloves
2 poblano peppers
2 jalapeno peppers, seeds removed, and sliced
2 tablespoons chili powder
2 tablespoons pickling spice
1 tablespoon cumin powder
1 teaspoon salt2 bay leaves
2 (28 ounce) cans plum-style tomatoes
1 cup water
     In a shallow roasting pan, brown the roast in olive oil over medium heat. Cook for 10 minutes, turn meat over and continue cooking. Place onions and cloves of garlic around the roast. Cook for 10 minutes or until the roast is browned. Place remaining ingredients around and over the roast. Cover; bake at 350 º for 3 hours or until the meat is tender. Serve with corn or flour tortillas. Serves 6.
